I am setting up a new iPhone 12 by transferring data, I AM AT 7 HOURS, and is this normal is there a way to cancel the setup...

We understand from your post that you are transferring data from one iPhone to another and it is taking much longer than expected. How are you transferring the data? Are you restoring an iCloud backup? If so, this article has steps which may help:
