As the iPhone 12 has an AMOLED display- there's no reason it can't have an always on display. I've had this for years on android and there's no reason for me to have to pick up the phone to show me the time.
I cannot figure out how to enable this.

I don't think there is an option for the display to be always on.
The only thing that I recall seeing in the Apple event video was a MagSafe accessory that was recognized and the clock would be illuminated thru the a window in the cover

That's ... so, surprising. I'm still not sure I get how it's not a thing.
