Deactivating my Watch

I bought the iPhone 12 Pro and have transferred everything from my iPhone XS. Do I still need to unpair my Apple watch from the phone? When I go to the watch app its asking me if i want to pair the watch to the phone, which I don't. Can I skip this step? It still appears in the Settings so I assume I need to remove it from there. Correct?
