When I try to text anyone in my contacts, their phone number does not come up. Instead it says something like, "Siri has found the following contact in your email" and it tries to text the person's email. The phone number is not even listed as an option. Help please!
It is hard to say. All you have to do is go to Settings>iMessage and see if it is activated. Then check your Send & Receive and ensure that your phone number is checked. That could cause your messages not to select a person's phone number.

Yes. And they have the contact information. So if I want to text a number I have to go to the contacts app and pull up a name and then choose message. But if I am just typing in a name in the new message section of the texting app, it will literally not pull up a number.

I would check to see that your iMessage is fully activated.
When you go to settings>contacts> is iCloud set as the default?
Restart the device after signing out of iCloud and then sign back in once it restarts.
