new here to using an apple watch and I use Siri quite often. Is it normal for it to launch via the watch over the iPhone?
sometimes prefer the speaker on the iPhone as it's louder if I don't have my air pods connected.

It would depend on the settings you have for the devices. If you have Hey Siri turned on for both, whichever device hears it first could respond. You may wish to turn Hey Siri off for the Apple Watch, that way the iPhone should respond.
