Whilst I’m not overly fussed on fast charging, I’ve always been led to believe using the charger that came with your phone is best for longevity.
Whilst we don’t get one with years model, which is no biggie, will it be safe to use my 18w USB-C charger that came with my 11 Pro? I don’t want to ruin my battery. Or would it be safest to purchase a new 20w one?

The 20 watt will charge 10% faster to 80%. Probably not worth the investment. It is safe to use any Apple power source with any iOS device.* They are all cross-compatible. *However, if you try charge an iPad with a 5 watt cube from older iPhones it will take days to charge.

You can use the 18 watt charger if you want.
Thank you for the reply. My question however is more around the safety in terms of preserving the health of the battery.
So would it be better to buy a 20w one? As I know Apple say that 18w is no longer supporting fast charging, and that makes me fear of adding incessant strain to it.
