interrupt full battery charge from eternal monitor?

I just bought an external monitor, LG 27UK850, for my Macbook Pro. These are connected using a Thunderbolt cable, and there is automatic charging of the MBP while they're connected. But it's not ideal to have my lithium-ion battery MBP at 100% charge all the time. So...is there a way to stop this automatic charging?

There is not, and there is no need to stop charging.

In macOS 10.15.5, Apple introduced Battery Health Management. One of the things that does is run your Mac on the battery occasionally, even when it's connected to AC power. An example from one of my Macs is below, in the right panel green indicates AC power, blue is the current charge and the highlighted 'blip' is when the Mac ran the battery down to ~93% then charged it back up, all while on AC.



So, your Mac will take care of it's battery, giving it the light, occasional usage it needs to maintain health.
