I’m upgrading my old iPad Air to a new iPad Air. The old one has AppleCare until 10/21. Can I transfer that to the new one. If I buy AppleCare on the new one, will the existing AppleCare one the old one be tacked on to the new one?

AppleCare+ is tied to a device. Existing coverage is only transferred to a replacement device if the iPad is exchanged by Apple under warranty or an AppleCare claim.
A newly purchased device will have an entirely independent AppleCare plan - should you choose to purchase this optional cover.
