Just made the switch from Samsung to Apple and I'm wondering if there is a way to use Apple Health on my Samsung Galaxy Watch Active 2? I'd really love for my step count to match on the app and on my watch.

No. You add the Samsung Health App as a source of Data in the Apple Health App, and it automatically adds the data to the Apple Health App.
