I noticed an opening screen on my Apple TV 4k when I launched it just now. It shows me all the upgraded things that can be done.
So I can pair my one set of AirPods - but can I also use other non-Apple bluetooth earbuds?

You can pair many brands and models of bluetooth headphones and earbuds. But you can use one at a time. Except for certain models that Apple supports for audio sharing.
