the last time I tried to install an update on my mac, it froze and I had to use a time machine backup to get it back up and running. I have not updated anything since. Now I see I can't back up my iPhone without an update. I'm still running Mojave - can I do the iTunes update without freezing my mac?

The update should be a patch to iTunes to allow it to communicate with iOS devices running the latest version of iOS. iTunes is baked into Mojave and isn't updated separately. If Mojave is up to date then you're running the current build.
