Ever since I downloaded the new iOS, my battery is draining rapidly. From an emotional level really ****** off at this latest apple debacle. But for for stuck, what are practical fixes - other than spending another $800-1000 to replace my new-ish iPhone 8.

New versions of iOS require extra processing to index data etc. You also could have a malfunctioning app that doesn't work with iOS 14.
Anyway, these are the standard steps for short battery life:
1) Have you tried a restart? If not, do it now.
2) Go to Setting > Battery > BATTERY USAGE BY APP to see the apps that are consuming your battery.
3) Check “Battery Health” in the link:

4) If all else fails, consider a battery replacement:
