I would like to trade in my iPhone 7 and get iPhone 11 but can I do it online? If yes, are there any restrictions on the shipping address of my device?

I don't think you can have the trade in box sent to a different address from the address your phone is sent to. You should contact Apple directly though to confirm that.
Yes you can trade your iPhone 7 (if it is in working condition, without major damage) for up to $100 towards the purchase of iPhone 11. And yes, you can do it online from buying the phone and identifying your iPhone 7 as your trade. Once you purchase your phone and it is shipped to you, Apple's trade in partner will send you a box to return the 7 in. Once the 7 is received and its condition confirmed, you'll be done. If the phone however, doesn't meet the conditions you said, they will notify you and either offer you less money or offer to send the phone back to you.
Just go to Apple.com, choose iPhone, then iPhone 11 and choose the model and options you want. You'll see the option to trade in your phone there.
