can’t change date and time on my ipad
When I try to turn off set automatically in date and time it’s greyed out, I have screen time so maybe that’s the problem.

Yes, having Screen Time enabled would do that. Turn off Screen Time, set the clock/date correctly, then you can re-enable Screen Time.
