9:41 Tue, Jan 9 keeps showing on wallpaper

This keeps coming up when i try to change wallpaper photo or wallpaper offered on i phone XR

When you choose a wallpaper then your iPhone simulates what the screen may look like and it displays the clock and date. It is not the current time and date. You can then tap on SET (bottom right) and then the wallpaper will be chosen.

That is exactly what I see on my iPhone 12 Pro. But, as Axel has correctly provided, that is just a simulated screen and the date/time Apple programmed into the software to display.
