Setting up new iPhone for 12 yr olds

I just purchased my 12 yr olds iPhones. I’m nervous to set them up correctly. Do I create them an email and Apple ID through Family Sharing on my phone? Then how do I get that info on the new devices? Or do I set it all up on their new devices then ad it to Family sharing on my phone? Help!
