How do I rename, or name, individual photos in the photos App? Do I need to open the photo in another App to view and rename it? not very intuitive 🥺

You can do this using an app called Photo Manager Pro.
It will create duplicate photos/images to use in this app, but once you have bunches of photos/images organised in this app, you can delete the originals from your Photos app Library to save space on your iPad.
I have been using this app for many years and allows to not only rename photos/images, but to organise them into folders and subfolders, as well.
