iPhone 7 Plus upgrading to 12 Pro Max With Sim Free Activation With Verizon

I currently have an iPhone 7 Plus with Verizon on the "Go Unlimited" Plan. I ordered the iPhone 12 Pro Max directly from Apple and chose "Sim Free Activation". I visited the local Verizon store and they told me they will give me a new Sim card for free. My new 12 Pro Max is arriving this Friday, 11/13 but the first available appointment at the store is on Monday. Is it okay to do the full transfer of my data and connect my new 12 Pro Max to my wi-fi or do I need to wait until I get the new Sim card on Monday?

I am (was) in exactly same boat... 12 pro max arrived 11/13, upgrading a 7 plus on Verizon unlimited. I went ahead and did transfer via Apple "Quick Start" prior to inserting SIM (all in it took about 45 minutes). I allowed new phone to install and update all apps before powering both phones down and putting SIM card from 7 plus into 12 pro max. Powered up new phone and it is good to go. Reset 7 plus and it's ready to turn in. I will swing by Verizon store at some point this weekend to see about the need for a "new" SIM card.

I did almost exactly what you did except I didn’t install the 7 Plus SIM card. I went to the local Verizon store and they installed a new SIM card that is 5G capable at no charge. Everything thing is working great and 5G speeds are very impressive.
