I have a watch series 3. After the last update the ability to set the date on the watch face disappeared.
How to get it back?
As it very inconvenient not to have a date ((( I’m very sad about that
You can try changing the watch face or changing the complications. Some will have a date option and some won't.

Install the Apple Calendar app on your iPhone, then make sure it is installed on your Apple Watch. The Apple Calendar is responsible for keeping track of the date, and providing the data complication for the Apple Watch.
Thank you, it really solved my problem! I didn't know that the apple watch is connected directly to the apple calendar and uses its date.
