Help with Etrecheck report/Mac is hacked
I believe my Mac got hacked. Can someone help me with my Etrecheck report? It shows that I have multiple partitions on my Mac and that I have super high CPU/runaway processes and other issues.

Those partitions are fine. There is no evidence of any hacking.
You are using the Mac App Store version of EtreCheck. This version has some technical limitations due to the Mac App Store. It cannot directly see processes owned by other users, such as the system root user, or super user.
Instead, you can run Activity Monitor to see these processes. By default, Activity Monitor has the same limitation. However, you can by pass it in Activity Monitor. Go to the “View” menu in Activity Monitor and set it to view “All Processes”. Then look at the CPU tab. You will be able to see those processes that EtreCheck reports as “other”.
These processes may come and go. Your EtreCheck report shows a single snapshot in time. By the time the report completes and you look at Activity Monitor, those “other processes” may be long gone. You can use Activity Monitor to “monitor” the situation if you are finding noticeable slowdowns on a regular basis.

The only hacking done on your computer was by you. There is no reason to ever install or run any 3rd party "cleaning", "optimizing", "speed-up", anti-virus or security apps on your Mac. You've installed Kaspersky and bit defender software on your Mac and it's does nothing but slow it down. Uninstall both according to the developer's instructions.
You can check to see if you've removed all of the supporting files by downloading and running Find Any File to search for any files with the application's name and the developer's name in the file name. For the mentioned software you'd do the following search(es):
1 - Name contains kaspersky
2 - Name contains bitdefender
Any files that are found can be dragged from the search results window to the Desktop or Trash bin in the Dock for deletion.
FAF can search areas that Spotlight can't like invisible folders, system folders and packages.
Also you've installed some VPN software. Unless you're using a true VPN tunnel, such as between you and your employer's servers or you bank's servers, they are useless. Public VPN's are anything but private. Uninstall it according to the developer's instructions.
