After the update the dock and applications are really slow reacting, making animations stutter and taking more time to open or close, but performance wise everything works smooth, it seem only loading times and animations are being affected. I have a screen recording: https://youtu.be/pohaKkPtPk0

For me the solution was:
Having a Razer gaming mouse the problem was the polling rate, Razer app is not working with Big Sur, so I changed the rate of the mouse using another pc, going back to 500, and everything is smooth again. So if anyone is using a third part mouse try and connect an Apple mouse if this could be the issue.
Download and run Etrecheck. Etrecheck is a diagnostic tool that was developed by one of the most respected users here in the ASC and recommended by Apple Support to provide a snapshot of the system and help identify the more obvious culprits that can adversely affect a Mac's performance.
Copy the report
and use the Additional Text button to include the report in your reply.
IMPORTANT:
Before running Etrecheck assign Full Disk Access to Etrecheck in the Etrecheck's Privacy preference pane so that it can get additional information from the Console and log files for the report:
Also click and read the About info to further permit full disk access.
Then we can examine the report and see if we can determine what might be causing the problem.
After the installation of Mac OS Big Sur, I noticed that my storage capacity was significantly reduced. That leads me to believe that Big Sur installation did not remove previous OS files and That is causing slow-down during Booting. I just dont know how to cleanup the old junk files. Using First Aid doesn't help resolve the issue.
Any suggestions?
With Big Sur on my macbook pro 15" Late 2013 (Core i7), dock animation is really slow and jerky.
