Get Info file sizes

When I do a Get Info on a file, I get two sizes. One is in bytes, the other shows megabytes and says on disk. For example, 636,718,051 bytes (435.7 MB on disk). Sometimes the first is larger, sometimes the second. What does each mean and what is the real file size?

I'm running the latest Catalina on an iMac although I think it's been this way forever.

Sorry if this has been asked before. It seems like such a newbie question. I've done numerous searches in different places and haven't found an answer.

Thanks

iMac 27″, macOS 10.15
