I have just upgraded to Big Sur and in Mail no Junk Mailbox is showing in the sidebar. Even although I move messages to the junk box, I can not find them. How can I reinstate this?

It is probably under the particular account header.
You can add that account junk or the All Junk item to the Favorites. Hover next to Favorites in the mailbox list. You should see a + button appear. Clicking it will bring up a dialog you can choose from.
