Printers/scanners are typically the first causality in upgrading any OS.

If it is listed as AirPrint printer, delete the existing printer in

If your printer is no longer supported you can

This is a bit confusing.

On one hand, the Epson support page at https://www.epson.eu/support?productID=11102&os=38#drivers says "There are no drivers for your chosen operating system."

Drivers exist for earlier Mac OS X, OS X, and macOS versions.

On the other hand, the page https://www.epson.eu/viewcon/corporatesite/kb/index/1018, when one enters macOS 10.11 (Big Sur) -> Inkjet Printers -> Stylus SX -> SX230, has the following information:

"Your product is macOS Big Sur compatible. The product driver is available via the Epson support website.

Printer Driver: Please use v10.85 or later.

Apple Image Capture Application (ICA): Yes. Click here for support on using Image Capture with your scanner."

The mentioned printer driver is not shown directly, but drivers with this version number appear at least with a model XP-530:

I have no way of testing this. Could it possibly be worth investigating further?

Epson and Drivers:

Epson probably has yet to do its part in compatibility. Bug Sur is a bit new.

Get the Drivers from Epson:

Epson is its own company. So, get the drivers from them and none other. Getting them from a Third-Party source is unwise, as it may sendup being Malware you install.

So, Scan your Mac for Malware: 

Use MalwareBytes for Mac --- This is software that searches for malware/adware. So, scan with it and then remove what is found. Once removed, uninstall MalwareBytes for Mac. Then restart the Mac.

That is another model (NX). Also, if you press the GO button, it changes to macOS 11.x, but then no driver is shown.

I had no trouble locating a Big Sur driver for the SX 230:
