Under Settings > Video and Audio, the “Audio Format” button replaced the “Audio Output” button so I can no longer select my Sonos speaker for audio output over AirPlay. It was literally there on Friday 11/13/20 and is now gone on 11/15/20. Any help would be greatly appreciated.

What tvOS version are you running? Look in General- About. There might have been a software update. .
Im on 14.2 and have both choices, although I do not have Sonos, I have Homepods and can also select them from the swipe down menu- Audio. Or by deep pressing the TV button to bring up control Center - AirPlay
Look in AirPlay & Homekit- Make sure AirPlay is on - Allow access to “Everyone”
