That installation of Big Sur on the M1 devices may be a special build that does not yet exist from the Mac App Store, or on Apple's Internet servers. It has happened before.
It would be a darwin award quest to be wiping M1 devices, and attempting reinstalls at this point in time. You could end up with a brick. AppleCare as suggested.

FWIW, I'm not doing that when mine arrives. :)
There's probably very few users with M1 Macs here. You might want to contact AppleCare. I won't ask why you are already reinstalling.
