Apple Watch - Cellular question

My husband and I both have Apple Watches, and pay Verizon $10 per month each for the cellular connection. We're wondering if we did away with the cell connection, of course Verizon would take away the particular phone numbers assigned to our Watches (which are connected to our iPhones), but could we still use the Watch to answer our phone if it's within Bluetooth range of our iPhones? We're considering cancelling the Watch fee on our Verizon bill, thereby saving $20 a month plus fees and taxes. (I'm not 100% sure but I think our Watches are 3rd generation, Watch OS 6.2.8.)

Yes a cellular watch will function exactly the same as a GPS only watch,the only difference is that to make calls and send texts you have to have your phone with you.

Your paying $20m per month so that you can leave your phone at home.
