Has anyone any idea how to stop the Apple Music app from auto launching on the Apple Watch. I have tried disabling the auto launch audio app toggle in settings on both iPhone and watch, but it has had no effect.

Try resetting the Watch. Press and hold the digital crown and power button together until you see the Apple logo and then release. The Watch will reboot. If that doesn't help, you may need to unpair the Watch, then re-pair it again.
Had to unpair and repair the watch but it seems to have done the trick.

Did you go to the Watch app, then go to Settings>General>Wake Screen>and turn off Auto-launch Audio Apps there?
Yes on both iPhone and Apple Watch. Tried restarting both devices as well
