If i remove the 2 4gb DIMMs to replace w/ 4 8gb DIMMs, will removing these 2 4gb DIMMs create me to lose anything off my iMac (late 2015)?

No, but you should back your data up anyway.
The RAM doesn't contain anything when the computer is off.

All I was trying to say was that if you remove RAM modules, having less RAM installed, will cause your computer to operate more slowly. I am sorry I missed the part where you said you were going to replace them with other modules. So, certainly no problem.
I removed the 2 4GB memory cards & replaced them w/ 8GB memory cards. So far so good. Don’t seem to have the issues that the Mac was having before
You can safely ignore Rosasara's post. It will not "slow down" your Mac.

No, you will not "lose anything" sine the "DIMMs" do not retain any user/system information after shutdown. They only contain "volatile memory."
Agree, however, you will very likely find that your computer will substantially slow down.
