Can someone spy on my iPhone?
iOS has added countermeasures to stop spying. When the camera or the microphone is on, a little indicator on the screen will show, notifying you. So you will know that you may be spied on even when you are not using these hardware. iOS should be safe enough so that hackers can’t get into your phone without your consent.

I saw my phone opening and closing apps on its own, and also the volume went up and down super fast, I have seen the apps doing this twice today.
So who would want to spy on you and have they had access to your phone?
No one can hack into your iPhone for spying and / or stealing data.
On the other hand, this can happen easily if someone else has or obtains your Apple ID and Password. So, be careful and do not share your Apple ID information with anyone else. Beware of the phishing scams that are designed to capture your Apple ID and Passcode by having you click on a link and taking you to a fake Apple site.

What do you mean by "spy"? Your phone company, for instance, has a pretty good idea of your whereabouts at all times that your phone is on. Is that what you mean by spying? Or are you talking about intercepting calls and listening in? or something else?
Scrolling my call log and opening my WhatsApp? A glitch? Anyways after I ended a phone call I placed my iPhone on my desk and it didn’t go idle as it usually does it opened up my call log then my messages on WhatsApp. I think that’s not something I shouldn’t be paying attention to.
