It's a known issue with 7.6 and 7.61 and currently no firmware update has been released.
If you search 'YouTube' in the Apple TV Hardware threads you will find similar posts.
Google/YouTube has acknowledged they are aware of the issue, but Apple has, as far as I'm aware, not commented as yet.
While older firmware can be reloaded into an Apple TV3, it will simply update again so I wouldn't bother.
The issue is purely when pausing a video. If you can avoid using pause at the moment it won't freeze.
