Can the M1 version of the MacBook Pro's run Catalina?
I'm thinking about downgrading from Big Sur since Big Sur is messing up my screen Resolution.

Big Sur is the first version of macOS that runs on M1 Macs.
Big sur was the os which brings support for silicon macs. Therefore I believe Catalina won’t work on M1. Sorry about this
Unfortuanately, Big Sur currently looks really bad with the Blurry Fonts.
