In the previous iOS, it was possible to type accents and macrons by holding down the letter and then choosing the appropriate accent. This has gone away in BigSur. How is this accomplished now? And will that be brought back? It was so simple!

Just holding the key. You can try this command in the Terminal. Just copy and paste it in, then hit return. It worked in previous versions of macOS.

Accents still work in Big Sur for me.
Are you just holding down the 'a' key or did you add a second key? Mine just types the 'a' over and over again, on repeat :-) aaaaaa
