Missing Column headers on MacOS Catalina

I recently upgraded my wife's iMac to MacOS 10.15.7 Catalina and was shocked to see that I could no longer select the columns I want to view and adjust the width of columns.

I'd like to bring back the Mail Tool from 10.14.6 so I can display what's important. Catalina only allows you to sort by a column. Most Apple upgrades increase usability. This one is a step backward. See screen shots. The one that shows 'use column format is from 10.15, the one with a blue background is from 10.14.6.

Is there a way to get the older version for 10.15?

Does anyone else have this issue?

Yes, in Catalina the options available when using Column Layout are greatly reduced.

Big Sur, on the other hand, brings all that functionality back, and much more.

Of course, don’t upgrade without a backup and without ensuring that the applications you rely on work, or can be updated. So far my experience with Big Sur has been great. As always YMMV.

Thanks so much. I’Ve still got a couple of 32 bit apps on my MacBook Air so I’ haven’t upgraded from 10.14.6. I held off on doing a Big Sur on my wife’s iMac because I usually wait for a couple of dot releases to catch items missed in beta
