Why does Apple stack up 9 purple, smiley unicorns first in line on my emoji Keyboard? Why can't I delete them? Why can't I, at the very least, send them to the back of the cue? Does Apple truly believe that I and every one of their customers is an 11-year-old girl?

Emojis came as a set, and no you cannot delete any of them.
You can choose a different set.

You can turn the unicorns off at: Settings - General - Keyboards - Memoji Stickers = Off.
