So I’ve noticed last few days things have changed and don’t know why. My emails are now dated in American format with month date year and on the keyboard where the £ symbol was is now the $ symbol. How can I change it back and why is this happening?

To change them back: Go to Settings > General > Language & Region > Region where you can change it. As to the reason why, at this point I'm afraid that I can't tell you.
