My phone was stolen from me, I could not remember the password for the Apple ID so I made previous attempts to log in With passwords I thought were correct however I got locked out my own account when I attempted to change the password... I don’t understand why I have to wait five days to unlock my account?

If you’re using the Apple automated account recovery process, there is nothing anyone here can say about that. We are all just users of Apple products like yourself. AppleID account recovery takes as long as it takes.
With iOS 14 you can avoid account recovery if you set a recovery key -> How to generate a recovery key - Apple Support
However, note that if you forget or lose the 28 character recovery key, and don’t have any other trusted devices, you would be unable to recover your AppleID. So if using a recovery key, write it down and keep it safe somewhere so you always have access to it.
