How to I change my verification phone number for Apple Pay?

Hi, I use Apply Pay, but if I make a web purchase using Apple Pay (not on my phone and but on a Mac), I'd like to verify using a different mobile number and change this.

I have amended the phone number Settings, Wallet and Apple Pay, but when I make the transaction, it still asks for verification on the previous phone number. How do I change this?

Using iPhone 8, IOS 14.1

You can also use a trusted device to obtain your verification code:
