The Apple Watch thinks im doing a workout though I just commute on an E-Scooter.. (Im not telling it im working out, not in any fitness app, I only use the Apple app for running).

No and no. But thanks for the suggestions. Hopefully Apple will see this is happening to a growing community, and will add a patch. Maybe a button like Drive mode. Or if someone usually runs 10kph and suddenly he runs 37 kph... something could be fishy :)
Take off the watch or turn off fitness tracking.
Don't hold your breath,this has been happening since the 1st generation watch in 2015.
