I want to upgrade my OS, but I don't want to lose iTunes, because I use it to convert music files (like m4a) to mp3s, and I don't know if the Apple Music App has that feature. Can anyone help? And are there other iTunes features I'll lose? Thanks...

Itunes was replaced by three separate apps. What happened to iTunes? – Apple Support
You will still be able to convert tracks to mp3.
