from the Terminal.app copy and paste:

sudo softwareupdate --ignore "macOS Big Sur”

 then

defaults write com.apple.systempreferences AttentionPrefBundleIDs 0 && Killall Dock

In the past, I believe the Upgrade notification stopped after a while (maybe a month). But, I'm not certain on that.

I'll upgrade to OS 11 when it has has been out long enough to shake out the bugs.

Works fine for me.

If you want to later show the update as available, copy and paste:

sudo softwareupdate --reset-ignored
