How do I activate the encryption on my emails. I don’t see advance settings anywhere. I have the iPhone 11.

If you are using the native Mail app, I'm not aware of a setting there to use. If you are using the Outlook app, you would need to contact Microsoft with questions about their app.
EDIT: I double-checked and found a setting in individual mail accounts regarding using encryption by default, but I cannot investigate that any further since I do not have any certificates to use for encryption and decryption. You may need to speak with Apple Support about that.
