IOS 14 update

I just got an IPhone 8 plus (second hand) because my IPhone 7 microphone and messages stopped working. I am trying to transfer my information over to the new phone so I can use but I am stuck on the IOS 14 page. It won't let me do anything until I update it. I tried leaving it overnight, I tried resetting the phone multiple times and it will not update. It is stuck on the software update page and says ''estimating time remaining'', and only says update requested. The WIFI is connected to the phone and it is fully charged so I really don't know what the issue is. Does anyone have an idea what to do? Thank you!

If the update is stuck or not making progress, here's some steps you can try: If your iPhone, iPad or iPod touch won’t update
