Is this possible?

My mother gifted my son with her old iPad a couple years ago. The iPad is hooked to her phone plan and can be used anywhere without WiFi. It’s also hooked up to her Apple ID. I don’t know her password so whenever my son wants to download a new app, we have to hunt her down to ask her what her password is (always changing).

Anyway, is it possible to basically sign out of her Apple ID, delete everything off the iPad, and log in using my Apple ID—but still be hooked to their phone service? And if I do log out of her Apple ID and erase the whole iPad, it won’t erase stuff from her phone right? (Every picture and app she has on her phone goes directly to his iPad too.) thanks!

The Golden Rule: Don’t share an AppleID between users. Each user should have their own AppleID for their own exclusive use - linked to their own primary email (and secondary/recovery email addresses and trusted telephone numbers). Sharing an AppleID causes multiple practical and data security issues.

You would be best advised to separate your digital identities and configure a new AppleID for the second user:

Erasing the device, if done properly, will not affect data on other devices. The proper process will erase the device and, importantly, remove any relationship to the previous AppleID and remove the Activation Lock:

Consider, however, that Apps are forever tied to the AppleID from which they are purchased. Apps may need to be purchased again. You might alternatively consider Apple’s Family Sharing features - which allow selective sharing or purchased Apple Services, Subscriptions, Apps and Media:
