Formatting options not available in Mac Notes app

Recently, I went to the notes app on my mac attempting to make a checklist. However, I noticed that whatever I do, the checklist button (along with most of the other formatting buttons) is greyed out. Whether I highlight existing text, start from a blank note, or anything else, the button and the option in the right click menu is not available. Does anyone else have this issue or could you tell me why it's not available anymore?

For context, my Mac is a 2013 Pro running Catalina because I don't have the space to update to Big Sur.

MacBook Pro 13″, macOS 10.15

Thanks for coming to Apple Support Communities for help today with Notes on your Mac. It appears that some options are grayed out.

Are these iCloud Notes or are you syncing with another service? Add or remove accounts in Notes on Mac. If you are syncing with another service it is possible these options aren't available. You can check in the Sidebar: View your notes on Mac

Thanks for getting back to us. Have you quit the Notes app and reopened it? You could even try doing this in combination with restarting,

If it's still occurring, try testing the Notes in a new user account to help isolate the issue further. Set up users, guests, and groups on Mac

Let us know what happens.

No, they're normal notes that I created right from the Notes app on my computer.
