How can I get 'icons with text' to appear in menu bar of Notes.app ?

In the menu bar of Notes app I can only get icons, see image below. If I go to View > customize toolbar... all the icons appear with text. I can drag the default set, or individual icons, onto the menubar and all the icons appear but their text descriptions disappear.

2020 MacBook Pro 13" running Catalina OS X10.15.7

Any suggestions? Thanks,

Currently we can't. Tell Apple what missing features you'd like restored or new features added to the system via Feedback - macOS - Apple.
