Default country for contacts : different behaviour for iPhone and iPad

I have an iPhone XR and an iPad Pro. They have exactly the same configuration. Furthermore, they are both set to Canadian locale and English language.

All my contacts in both devices are based on my Gmail account. Most of my contacts have an address with the country shown, but the address is arranged Swiss style (with the postcode before the town).

If I edit the contact on the iPhone, the country field is automatically filled with Canada (where I am now) and the format is correct (postcode last) but if I do the same on the iPad I get Switzerland (where I used to live) and postcode before the town.

How I can fix that? Even editing them only shows the correct format until it’s saved, then reverts!!
