Did you try:

In settings on your iphone.

click screen time.
content and privacy settings
iTunes and App Store purchases
deleting apps set to allow.

i was having the same problem you are but after doing this, I was able to delete unwanted apps from my watch.

Apple Watch Storage Full -> "Other" is Responsible I have no idea what all the “other” data on my watch is. I have no music or media on it. I deleted every app that I could. Yet it won’t let me delete stupid apps like stocks or voice memos that I don’t use. I have only a few pictures on there for the watch face. That’s it. I have it updated to current update and I have restarted it. How in the heck do I stop this annoying freaking message about it being full? How do I delete the “other” what even IS the “other”? NO ONE will answer that.

How to stop Spotify from auto-launching on Apple Watch? I've already disabled the "Auto-Launch Audio Apps" setting in the "General" section and the "Return to App" feature is disabled for Spotify in the Apple Watch app on my iPhone, but every time I start Spotify on my iPhone it launches on my Watch.

Try this;

Unpair your Apple Watch via the Watch app on your iPhone.

Then Re-pair your Apple Watch again,this usually frees up

enough storage space to update your watch.And without any loss of data.
