Mail names reversed
Since the iOS 14.2 update the name in each Mail item have been reversed. For example, Apple Store appears as “Store Apple”. This is very confusing. When will it be fixed?

In your example, might “Apple Store” be one of your contacts? I suspect that’s very likely. In that case, check Settings > Contacts > Display Order.

Do your Part: What you describe, indeed seems like a bug of sorts. So, report it to Apple. Apple wont get back to you directly, but the more feedback Apple receives on this, the more likely they may consider it.
Now that we know you use gmail, I can tell you I also use gmail and do not have this issue with this or any other email account.
I suggest you try Settings > Contacts > Display Order = “First, Last” to see if that helps or rectifies the issue. If it doesn’t, return it to its current setting.
Possibly an Apple glitch, but to aid in troubleshooting, what mail service are you using? Do you have another mail provider? If so, do you see the same issue there?

FYI Since this isn’t happening in the gMail mail app and is happening in the Apple mail app, my conclusion is that it’s an Apple bug.

You might consider notifying Apple what you discovered. Here’s how.
Apple Store is not one of my contacts. This is unrelated to Contacts.
Another example: Apple Communities displays as “Communities Apple”.

That does not happen to me. Perhaps it’s related to some peculiarity with your email service provider.

Tried that. Doesn’t help. The problem names are not in Contacts.
I fixed the issue with the Mail names on my iPad Pro, but I’m not particularly pleased with the solution:
If on the iPad Pro I go to Settings/Contacts and set up the Sort Order as “Last Name then First Name” and the Display Order as “First Name then Last Name”, then names appear correctly in the Mail app EVEN THOUGH though the Senders’ names aren’t in my Contacts list.
(In the Contacts list I prefer to see BOTH the Sort order and the Display order as “Last Name the First Name”.)
More info...I have an iPhone 6 and due to its age it will only update to iOS 12.4.9. On it both the Contacts Sort Order and the Display order is “Last Name then First Name” and the problem in Mail with names that I experience on the iPad Pro doesn’t appear on the phone.
I continue to think this situation is a “feature” with the recent iOS. Guess I’ll just have to live with it or switch to using gMail on my iPad. I use gMail on my computer but prefer Mail on the iPad.
