how do you insert a sim card into your watch to receive calls?

You don't,if it's a cellular watch the call is sent to a built in Esim in the watch.
If it's a GPS only watch the call is passed to the watch via bluetooth from your phone so you have to have your phone with you to make and receive calls,with the cellular watch you can leave your phone at home.
